Saffron Thandai

SAFFRON THANDAI

makes paste for 6-8 glasses of thandai

YOU WILL NEED

THANDAI PASTE

  • 1/3 cup almonds

  • 1/3 cup cashew nuts

  • 2 tbsp fennel seeds

  • 1 tbsp melon seeds (magaz seeds)

  • 1 tbsp poppy seeds

  • 15 whole black peppercorns

  • 10 cardamom pods

  • a large pinch saffron strands

  • 1/2 tbsp dried rose petals (optional)

FOR THE DRINK

makes 2 tall glasses

  • 2.5 cups of cold milk (alternate or regular)

  • 2 tbsp unrefined sugar (or more as per preference)

METHOD

  • Soak all the ingredients of the thandai paste overnight in a cup of water.

  • Blend the soaked ingredients into a fine paste.

  • To make two tall glasses of Thandai, take 1/2 -3/4 cup of paste (depending on the paste thickness) and blend it with the 2.5 cups of milk and 2 tbsp unrefined sugar.

  • Blend well to get a nice frothy thandai. Garnish with rose petals and enjoy!
