Stir Fry Soba Noodles

Cold weather and a warm & spicy bowl of noodles - does it get better than that? I reverse engineered this recipe from a meal I had at Shadowbrook restaurant in Capitola, CA almost 4 years ago, on my birthday! I loved it so much and the pandemic had me reminiscing it.

A lot of Soba noodles contain wheat flour, so if you are going GF, make sure you buy the one that says 100% buckwheat. Soba noodles can be eaten cold or hot, but I hands down prefer them right off the stove. The best thing about this is it is ready in a jiffy!

Serves 2

YOU WILL NEED

  • 1 bundle/~100 grams dry soba noodles

  • 1.5 cup assorted stir fry veggies of your choice

    • I used edamame, thinly chopped mushrooms, shredded purple cabbage, carrots cut in ribbons using a peeler, diced red bell pepper, broccoli florets, chopped green beans

  • handful of cooked snow peas or sugar snap peas, split into two

  • 1 tsp chili garlic hot sauce (I love Yai’s Thai Chili garlic sauce, mind you its HOT!)

  • 2 tbsp soy sauce

  • 1 tsp grated ginger

  • 2 tsp coconut sugar (or brown sugar)

  • 1 tbsp sesame oil (or any other neutral oil)

  • 2 tsp toasted sesame seeds

METHOD

  • Bring a large pot of water to boil and cook the soba noodles for about 5 minutes just until tender. Stir occasionally to avoid lumping. Soba noodles are naturally very salty, so you don’t need to salt the water unlike pasta. Drain the noodles in a colander and give them a cold water rise to rid of the starches.

  • While the soba noodles boil, heat a large skillet over medium heat. Add oil and assorted chopped veggies. Sauté them, stirring frequently until they are just done and light charred. Slightly crunchy veggies work really well here!

  • In a small bowl, mix soy sauce, chili garlic sauce, grated ginger, sesame seeds and sugar. Whisk it well.

  • Add the sauce mix to the noodles, add in snap peas and mix well.

Serve hot and enjoy! 😊

SUBSTITUTIONS

  • I made this with Soba noodles, but can totally use rice noodles, udon, spaghetti, linguine, or fettuccine - whatever noodles you have on hand.

  • If you don’t have chili garlic sauce, use 1 tsp of minced garlic and 1 tsp or more of chili flakes. Add them along with the stir fry veggies step.
