Boiled Peanuts with Sumac
Mellow sunlight and a bowl of steam rising,
a southern favorite but full of desi nostalgia,
young and old relish with equal glee,
popped shell reveal tenderness,
shucked on like an oyster to taste more tangy sumac.
BOILED PEANUTS WITH SUMAC
yields 300g boiled peanuts
YOU WILL NEED
300g raw peanuts in shell
1 tbsp salt
2 tsp sumac
METHOD
Rinse the raw peanuts well to wash away all the dirt.
If you are using a pressure cooker, place all the ingredients in the cooker, add water enough to cover an inch above the peanuts. Give it a stir. Cook for 4 - 5 whistles. Depending on volume and shape, your cooker may need different amount of whistles, but roughly you need to cook for 25-30 minutes to get tender not mushy peanuts.
For Instant pot, combine all the ingredients in IP. Add water until peanuts are just covered. Place a steamer rack to weigh them down and keep them submerged. Place the lid on and cook on manual high pressure for 75 minutes for slightly firm but tender peanuts or 90 minutes for extra tenderness. Allow the pressure to release naturally, about 15 minutes.
I like to serve without draining the liquid, let’s you in on more of the flavored liquid when you pop open the cooked shell and shuck on the little lingering liquid 🥰
