Mom's Lemonade / Limbu Sherbet
This Limbu sherbet aka homemade lemonade was one of the first things my mom taught me in the kitchen. It used be a standard guest refreshment back in the day, in a lot of middle-class Indian households. It brings back sweet childhood memories for me and I hope it builds some for you and your family π
Makes 2 8oz Glasses of Sherbet
YOU WILL NEED
For Sherbet
2 cups Filtered Water
3 tbsp Lemon Juice
3 tbsp Brown Sugar or White Granulated Sugar
1/4 tsp Cumin
pinch of Salt
(Optional) For the Sugar Spun
1/4 cup White granulated Sugar
METHOD
Combine all the Sherbet ingredients in a deep vessel. Stir until the sugar has dissolved and set aside.
SUGAR SPUN GARNISH
I used the method listed in http://stirandstrain.com/ and made changes to it make the garnish.
In a small saucepan over medium heat, add sugar and stir until it starts to melt.
Continue stirring until the sugar changes color and turns golden-brown.
Turn off the flame and continue stirring.
The liquid will start to thicken as it cools. When the sugar is stringy, dip the rim of the glass in the sugar and slowly pull it out, twisting finally to break off the sugar. Keep it upside down until it hardens completely - 30 seconds.
This is the hard part and may take a few tries, but donβt be disheartened!
TO SERVE
Pour the prepared Sherbet in the glasses and show off this classic homemade Sherbet in style π.
TIPS
The brown sugar helps with the quick dissolve, so I recommend it instead of white sugar if you have it on hand.
