No-Sugar Berry Popsicles
Zero sugar dessert for a hot summer day? Count me in! Absolutely clean ingredients - strawberries, coconut water (my favorite bottled coconut water is harmless harvest!), mint leaves and raspberries in a mold and in the freezer for 5-6 hours! That’s literally all it takes.
No-Sugar Berry Popsicles are more of an inspirational recipe than a recipe you need to follow to the tee. I am going to give you the algorithm for it, which takes the thinking out of it and makes it easy to make popsicles based on the fruits you have at hand or prefer, and you can create variations once you have some guidance.
You start with a liquid base - I love coconut water for the electrolytes and the flavor. You can use fruit juices. I would avoid water, since the popsicles would taste bland with a water base. Instead, crush some berries or fruits in water and use that as a base if you don’t have juice or coconut water available. Next you want fruits that freeze well - berries work best here and so do tropical fruits, and skinned citruses. You want mango, pineapple, kiwi, stone fruits (peaches are great!), watermelon. A sweet and tangy fruit combination works really well! Edible flowers, mint leaves are all beautiful additions too!
No-Sugar Berry Popsicles
makes 12 popsicles
YOU WILL NEED
12-15 strawberries
8-10 white alpine strawberries/ pineberries
a dozen or so raspberries
15-20 mint leaves
32 oz coconut water
METHOD
Wash all the fruits well and chop them lengthwise. Tear up mint leaves roughly.
Add a mix of all the fruits and mint to the molds.
Pour coconut water in molds, and insert wooden sticks.
Freeze them for 5-6 hours, and carefully remove them from the mold as instructed.
